The national Fire Protection Association is warning home chefs to be careful when deep frying a turkey. Just a small amount of oil coming in contact with the flame can cause a large fire. Be cautious not to put too much oil in the fryer. Ensure the turkey is full defrosted and completely dry before putting it in the kettle. Only cook in an open-air environment, not the porch or in the garage, not even with the door open always keep a fire extinguisher handy.
